The relationship of dairy productivity of goats with biochemical parameters of milk

Abstract. The purpose of the work is to evaluate the main biochemical parameters (BChP) of Alpine goat milk and the relationship of BChP with dairy productivity. Three groups of goats (N=37) were identified in terms of daily milk yield: 1st (n=13) with a yield of 0.5-1.0 liters; 2nd (n=14) with a yield of 1.0-1.5 liters; 3rd (n=10) with a yield of 1.5-2.0 liters. One of the important and original parameters to be determined is the total amount of water-soluble antioxidants (TAWSA) in goat milk. This integrated assessment allows us to establish the synergistic effect of all hydrophilic components of milk. Regular changes in the TAWSA value from 22.52 mg/L (1st) to 16.39 mg/L (3rd) are associated with symbiotic changes in a number of BChPs in goat milk. Thus, the values of true (total) protein and lactose in the milk of goats in group 3 decrease by -14.5% (-13.1%) and -2.4%, which may contribute to the TAWSA values. The decrease in these BChPs is associated with a deficiency in the synthesis of protein and carbohydrate substances by the mammary gland with an increase in milk yield of goats in group 3. The total number of significant correlations for the BChP of goat milk is predominant and gradually increases with increasing milk yield (from 71% for group 1 to 82% for group 3). Quantitative relationships between BChP and TAWSA significantly complement the parameters of the goat milk profile and are important characteristics of the quality of this raw material for obtaining food products needed by humans.
