Abstract. The quality of goat down is largely determined by the amino acid composition of keratin. However, data on the influence of animal gender and coat color on this profile remain fragmentary. The aim of this study is a comparative analysis of the amino acid composition and fineness of down from Orenburg goats of different genders and coat colors in the Moscow region The study was conducted on 20 animals aged 12 months, divided into four groups by gender and color (black/white). The amino acid profile was determined by ion exchange chromatography with post-column derivatization with ninhydrin. It was found that down from white goats is characterized by a significantly (P≤0.05) higher content of lysine and arginine, as well as a tendency to accumulate essential amino acids compared to black animals. At the same time, key structural amino acids (cysteine, methionine, glycine) remained stable in all groups, indicating the homogeneity of the physicomechanical properties of the raw material. A relationship was revealed between the increased content of a number of amino acids and the increase in fiber fineness in white goats. These data suggest that the amino acid profile of down fiber can be considered a potential biochemical marker for assessing its technological properties.
