The impact of transportation and the slaughter season on beef quality (review)

Summary. The article presents a generalized material containing information from Russian and foreign experts on the impact of technological stresses on the amount of live weight loss and the quality of products received from farm animals. Stress factors such as the year season, transportation, distance of animals transportation, pre-slaughter handling in meat processing factories, affecting on the loss of live weight and animals injuries, as well as the quality of carcasses and beef are considered.
