Meat productivity of bulls of different beef breeds

Summary. The article presents the results of meat productivity of animals of the following breeds: Hereford (I group), Kazakh white-headed (II group), Kalmyk (III group). The aim of the study was a comparative characteristic of meat productivity of bulls of the above breeds at the age of 18 months. Analysis of the studies showed the advantage of experimental bulls of the Hereford breed in terms of the studied parameters of meat productivity. So, fresh carcasses were obtained from them, they were 21.2 kg (8.36%) III – 37.7 kg (15.91%) heavier than group II analogues; slaughter mass was higher by 22.5 kg (8 , 46%) and 37.1 kg (14.76%), respectively.

By carcass yield, no significant difference between animals of different breeds was observed.

Animals of the Kazakh white-headed breed were 1.26 kg (10.12%) and 1.87 kg (15.03%) inferior to peers from groups I and III by the mass of internal raw fat.

The Hereford bulls were characterized by a higher content of pulp in a half-carcass, surpassing the Kazakh white-headed animals in this indicator by 10.05 kg (9.95%) and Kalmyk by 16.55 (17.61%), respectively. The minimum content of bone tissue was found in bulls of group III. Analogs of groups I and II were leaders in this indicator by 3.40 kg (17%) and 1.90 kg (9.5%). According to the yield of flesh per 1 kg of bones, no significant difference was found.
