Meat productivity and chemical composition of broiler chicken meat with the use of anti-stress feed additives in industrial conditions

Abstract. The article examines the effect of feed additives with an anti–stress effect - gamma-aminobutyric acid (GABA), fumaric acid and their combination on meat productivity and the chemical composition of broiler meat. The experiment was carried out on Ross 308 cross broiler chickens for 42 days. At the beginning of the study, four groups of birds (at the same age) were formed, with 50 heads each. The control group received standard complete feed (CF). CF with the inclusion of 25 g/t of GABA feed and 200 g/t of fumaric acid feed was introduced into the diet of the 1st experimental group; CF with 25 g/t of GABA feed was introduced into the diet of the 2nd group.; 3 groups – CF with 200 g/t of fumaric acid. The research results showed that the use of the studied additives in the diet of chickens had a positive effect on the slaughter characteristics of carcasses and the chemical composition of meat. The studies revealed a statistically significant increase in slaughter yield in experimental birds compared with the control group: by 2.4% (P≤0.01), 0.7% (P≤0.01) and 2.6% (P≤0.05), respectively. The introduction of GABA into the diet contributed to an increase in the protein content in the muscle tissue of chickens, exceeding the indicators of the control group by 1.1% (P≤0.05). The use of fumaric acid at a dosage of 200 g/t led to an improvement in the amino acid profile of meat in chickens of the 3rd experimental group: the amount of essential amino acids increased by 0.8%, and the amount of interchangeable amino acids increased by 2.4% relative to the control. The combination of GABA and fumaric acid increased the energy value of broiler meat.
